调研分析了酒泉手工小麦粉皮的质量现状,为当地小麦粉皮的产品质量控制和提升提供参考。对采集的35份酒泉手工小麦粉皮的感官、水分、氯化物、二氧化硫残留量、铅、甲醛次硫酸氢钠等9项指标进行分析测定,并从质量指标和安全品质两个方面对测定结果进行了评价。结果表明,酒泉手工小麦粉皮的水分、总灰分和氯化物含量存在较大差异,平均值分别为78.3、68.4、39.1 g/kg,变异系数分别为16.69%、20.40%、20.97%;铅和总砷等外源性污染物含量均低于方法定量限0.04 mg/kg和0.040 mg/kg;二氧化硫和甲醛次硫酸氢钠等不允许使用的食品添加剂或非法添加物均未检出;仅1份样品中铝的残留量为33.7 mg/kg,其余样品中铝的残留量均低于方法定量限25.0 mg/kg。综上可见,酒泉手工小麦粉皮不仅有良好的感官特性,铅、总砷等重金属污染物含量较低,在加工过程中未加入甲醛次硫酸氢钠等非法添加物和二氧化硫等具有漂白作用的物质。

This study investigated and analyzed the current quality status of hand-made wheat vermicelli in Jiuquan, aiming to provide a reference for local product quality control and improvement. A total of 35 samples were evaluated for 9 parameters, including sensory quality, contents of moisture, chloride, sulfur dioxide residue, lead, and sodium formaldehyde sulfoxylate. Results were assessed from both quality and safety perspectives. The findings showed large variations in moisture, total ash, and chloride contents, with average values of 78.3, 68.4, and 39.1 g/kg, and coefficients of variation of 16.69%, 20.40%, and 20.97%, respectively. Levels of exogenous contaminants such as lead and total arsenic were below the quantification limits of 0.04 mg/kg and 0.040 mg/kg, respectively. No prohibited or illegal additives such as sulfur dioxide or sodium formaldehyde sulfoxylate were detected. Only one sample had an aluminum residue of 33.7 mg/kg, while all others were below the quantification limit of 25.0 mg/kg. In summary, Jiuquan hand-made wheat vermicelli exhibited good sensory characteristics, low levels of heavy metal contaminants such as lead and arsenic, and no illegal additives or bleaching agents were used during processing.
