藜麦作为一种富含营养和生物活性成分的粮食作物,具有多样的品种资源和丰富的开发利用价值,近年来引起了广泛关注。为了推动藜麦产业的可持续发展,全面认识其特性与应用价值,提升公众对藜麦的认知与利用水平,本文在系统梳理前人研究成果的基础上,结合最新研究动态,介绍了藜麦的植物学特性、生理学特征及其在全球的资源分布和适生环境,综述了藜麦在食品、饲料、医药、化妆品、城市绿化和观赏等多个领域的应用,以期为藜麦新品种的选育和产品开发提供有益参考。

As a grain crop rich in nutrients and bioactive components, quinoa has attracted extensive attention in recent years due to its diverse variety resources and abundant development and utilization value. In order to promote the sustainable development of the quinoa industry, comprehensively understand its characteristics and application value, and to enhance the public's awareness and utilization level of quinoa, this paper systematically reviews the previous research results and combined with the latest research trends to provide an in-depth overview of the botanical characteristics and physiological features of quinoa, as well as its resource distribution and suitable environment in the world. At the same time, the application of quinoa in edible, feed, medicine, cosmetic, urban greening and ornamental fields is reviewed, which aims to provide a useful reference for the breeding and product development of new quinoa varieties.
